Fall is here! Time to pull out those great recipes for your favorite comfort foods – creamy, biscuit-topped casseroles…stuffed squash – recipes with hearty ingredients. All this talk is making me hungry…let’s make some grub! Here are links to a few of my fave recipes this time of year:
Stuffed Acorn Squash
I found this recipe last year on one of my favorite blogger’s websites. I just used a 1 lb. roll of turkey sausage rather than the links, to make it easier. This one screams fall!
Skinny Tuna Casserole
Don’t let the title fool you… this recipe may have fewer calories but it’s super flavorful and delicious! I found this while looking for a recipe that didn’t use creamed soup. This is not-yo-mama’s tuna casserole – you are going to love it!
Shepard’s Pie
Who doesn’t love a good Shepard’s Pie?! This one has great flavor in the filling. It suggests making “healthified” mashed potatoes for the topping but I must admit, when on a time limit, I’ve used Idahoan instant mashed potatoes. I usually don’t like instant potatoes but I found these and have been enjoying mashed potatoes as a frequent side dish ever since!
Chicken Broccoli Casserole
This recipe is a favorite of mine from childhood. The curry adds just a hint of distinct flavor that makes it memorable.
Artichoke Mushroom Pie
It’s amazing what you can find on the internet! This one was another favorite from childhood (I was not a picky eater as a child ;)) I loved it so much, I asked my mom to share it in my elementary school cookbook.
